India has such a wide variety of cuisines that if you begin to taste a new dish everyday it will take quite a few years before you will have exhausted the entire repertoire of Indian food. Indian food is now widely available all over the world but is limited to a select few dishes, generally the curries.
There is an enormous range of sweet dishes that can be savored only in India. The diversity is surprising given the limited basic ingredients, whereas rice is the staple food in the South and the East, wheat is in the North and the West. Though most of the spices are associated with Indian food, the Portuguese introduced chillies to India. Whole or ground these spices give each region its distinctive combination of flavors. The cooking medium is generally oil - mustard oil in the North and the East, sesame and coconut oil in South and groundnut oil in the West.
Indian food is more popular for its wide variety of vegetarian dishes that depend on the seasonal availability. Dal is a must almost all over the country. Fish, mutton and chicken are the more popular non-vegetarian dishes of which too there is a considerable variety. A meal is generally accompanied by curds, either in the form of raita or eaten plain. This is mostly to combat the other spicy dishes as well as an excellent aid to digestion. Another integral part of an Indian meal is the stupendous variety of pickles - both hot and sweet.
The problem with much of the hype about cooking today is that the focus is often not on the simple, straightforward, good dishes that comprise the repertoire of most home cooks, but on the overly fancified recipes developed by chefs to impress us when we spend five hundred bucks per person in their restaurants.
Home cooking is a different story: Simple, basic, and easily accomplished using a variety of on-hand ingredients along with one or two things brought home from the market. With this kind of approach, anyone can cook almost anything but Anju adds a special touch to even this art of cooking.
As she comes from a family where traditions still dominate, she has searched for the hidden treasures of our culinary heritage. It has taken her a lot of research to fish out the recipes, which were perfected by earlier family members handed down from generation to generation as no written record is kept for fear that someone else would copy the recipes and the delicacy would no longer remain the family’s specialty.
Re-creation, however, can be rather challenging at a time like this, when tradition is taking a backseat, and almost nobody remembers how to make their grandmother's signature payasams or pickles.
Anju has also a wide variety of western cookery recipes under her belt and can effortlessly give a French, Mexican or Italian meal complete with her special baked bread, home pizza bases and noodles. Can I say more? No, I think you should all just try out and enjoy!
